There are many vegetables and varieties of vegetables eaten across the globe, some of which are more common or less common in some places than others. In America, two of the most commonly eaten vegetables are frequently touted to be lectin-containing foods. In Americans surveyed in 2023, 64% stated they bought tomatoes and 60% stated they bought potatoes in the past 12 months, coming in at #1 and #3 in the survey, with carrots coming in at #2. Bell peppers were also mentioned and came in at #5.
